Instructions
Prepare the Slow Cooker: Begin by placing the chicken thighs at the bottom of your slow cooker.
Mix the Sauce: In a bowl, whisk together the sweet chili sauce, soy sauce, honey, minced garlic, and grated ginger until well combined.
Add the Sauce: Pour the sauce mixture over the chicken thighs, ensuring that they are well coated.
Add Vegetables: Toss in the sliced red and green bell peppers and onion on top of the chicken and sauce.
Cook: Cover the slow cooker and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is tender and easily shredded.
