Instructions
Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
Season the sirloin tips with salt and pepper. Add the sirloin pieces to the skillet in a single layer (work in batches if needed) and sear for about 3-4 minutes on each side until browned. Remove from the skillet and set aside.
In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and sauté until translucent, about 4-5 minutes.
Stir in the minced garlic and cook for an additional 1 minute until fragrant.
Return the seared sirloin tips to the skillet. Pour in the beef broth, soy sauce, Worcestershire sauce, and sprinkle in the dried thyme. Stir to combine all the ingredients.
Bring the mixture to a gentle simmer and cook for about 15-20 minutes, allowing the flavors to meld.
If you prefer a thicker gravy, mix the cornstarch with a tablespoon of cold water and stir into the skillet. Cook for an additional 2-3 minutes until the gravy thickens.
Taste and adjust seasoning with more salt and pepper if desired.
Serve the sirloin tips drizzled with gravy, garnished with fresh parsley.
