Instructions
Preheat your oven to 375°F (190°C).
In a large skillet over medium heat, add olive oil and sauté the chopped onion until translucent.
Add minced garlic and ground turkey to the skillet, cooking until the turkey is browned and cooked through, about 5-7 minutes.
Stir in Italian seasoning, paprika, salt, and pepper. Mix well and remove from heat.
In a baking dish, layer half of the sliced zucchini at the bottom.
Spread half of the marinara sauce over the zucchini slices.
Add the ground turkey mixture on top of the marinara layer, spreading it evenly.
Next, layer the remaining zucchini slices and top with the rest of the marinara sauce.
Sprinkle halved cherry tomatoes evenly over the top and finish with a generous layer of shredded mozzarella cheese.
Cover the baking dish with aluminum foil and bake for 30 minutes.
Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
Let the casserole cool for a few minutes before garnishing with fresh basil leaves.
