Italian chicken sausage, sliced

Instructions
In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sliced sausage and cook until browned, about 5-6 minutes.
Once sausage is browned, add the diced onion, bell pepper, and garlic. Sauté for another 3-4 minutes until the vegetables are softened.
Stir in the smoked paprika, oregano, cayenne pepper (if using), salt, and pepper, mixing well to coat the sausage and vegetables.
Add the rice to the pot and stir for 1-2 minutes so the rice browns slightly and absorbs the flavors.
Pour in the diced tomatoes and chicken broth, stirring everything to combine. Increase the heat to bring the mixture to a gentle boil.
Reduce heat to low, cover the pot, and simmer for about 20 minutes, or until the rice is cooked and has absorbed most of the liquid.
During the last 5 minutes of cooking, add the frozen peas and stir gently to combine.
Remove from heat and let sit, covered, for an additional 5 minutes. Fluff the rice with a fork before serving.
Garnish with freshly chopped parsley or cilantro, adding a fresh touch to the dish.
Notes
Feel free to adjust the heat level by modifying the cayenne pepper.
