In a large skillet or sauté pan, heat the olive oil over medium heat.
Add the sliced chicken sausage and cook until browned, approximately 5-7 minutes. Remove and set aside.
In the same pan, add diced onion and garlic. Sauté until the onion becomes translucent, about 3-4 minutes.
Add diced red bell pepper and zucchini, cooking for another 3-4 minutes until they soften.
Stir in the orzo pasta, dried thyme, smoked paprika, salt, and pepper. Mix well to combine.
Pour in the chicken broth, bringing the mixture to a gentle simmer.
Reduce heat to low, cover the pan, and allow to cook for about 10-12 minutes, stirring occasionally, until the orzo is al dente and most of the liquid is absorbed.
Once cooked, stir in the fresh spinach and the previously cooked chicken sausage, allowing the spinach to wilt.
Taste and adjust seasoning if necessary.
Serve hot, garnished with grated Parmesan cheese if desired.
