Instructions
Preheat the oven to 375°F (190°C).
In a large mixing bowl, combine the shredded chicken, black beans, corn, diced tomatoes, rice, and salsa. Stir well to combine all ingredients.
Add in the cumin, chili powder, garlic powder, and season with salt and pepper to taste. Mix until evenly coated.
Grease a 9x13 inch baking dish with olive oil. Pour the chicken mixture into the dish, spreading it evenly.
Sprinkle the shredded cheese generously over the top of the casserole.
Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
After 20 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
Once done, remove from the oven and let it cool for a few minutes.
Top with diced avocado and garnish with fresh cilantro before serving.
Notes
Feel free to adjust the spice level by using different salsa.
