Instructions
Preheat your oven to 350°F (175°C) and grease a large casserole dish.
In a large mixing bowl, combine the shredded cooked chicken, black beans, corn, diced tomatoes with green chilies, and salsa. Mix well.
Add the cooked brown rice, cumin, chili powder, diced bell peppers, and red onion to the mixture. Stir until all ingredients are thoroughly combined.
Pour the mixture into the prepared casserole dish, spreading it evenly.
Sprinkle the shredded cheddar cheese over the top of the casserole.
Cover the dish with foil and bake in the preheated oven for 25 minutes.
After 25 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden.
Once baked, remove from the oven and let it sit for 5 minutes.
Garnish with fresh cilantro before serving.
Serve warm with avocado slices and a dollop of sour cream on the side.
