Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a small bowl, whisk together the maple syrup, Dijon mustard, olive oil, minced garlic, soy sauce, and a pinch of salt and pepper until well combined.
Place the salmon fillets on the prepared baking sheet, skin-side down.
Brush the maple Dijon glaze generously over the top of each salmon fillet.
Reserve a small amount of the glaze for drizzling after cooking, if desired.
Bake the salmon in the preheated oven for 15-20 minutes, depending on the thickness of the fillets, or until the salmon is cooked through and flakes easily with a fork.
Optional: In the last 2 minutes of cooking, switch the oven to broil for a caramelized finish on the glaze.
Remove the salmon from the oven and let it rest for a couple of minutes.
Drizzle the reserved glaze over the salmon, and garnish with fresh parsley if desired.
