Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.
Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until it resembles coarse crumbs.
Make a well in the center of the mixture and pour in the buttermilk and honey (if using). Gently mix with a spatula until the dough starts to come together.
Turn the dough out onto a lightly floured surface. Gently knead the dough 5-6 times, just until it holds together. Avoid overworking the dough for the fluffiest biscuits!
Pat the dough into a 1-inch thick rectangle. Using a sharp cutter or glass, cut out biscuits and place them on the prepared baking sheet, close together but not touching.
Gather any scraps, re-pat, and cut out additional biscuits.
Bake for 12-15 minutes, until the biscuits are golden brown on top.
Remove from the oven and brush with a little melted butter if desired for extra richness.
