Instructions
In a mixing bowl, combine the peanut butter and honey (or maple syrup). Mix until smooth.
Stir in the vanilla extract and salt until well blended.
Gradually add rolled oats to the mixture, stirring until fully incorporated. If desired, add powdered sugar for extra sweetness.
Line an 8-inch square pan with parchment paper, leaving some overhang for easier removal.
Transfer the peanut butter and oats mixture into the lined pan, spreading it evenly and pressing it down firmly to create a compact layer.
In a microwave-safe bowl, melt the dark chocolate chips in 30-second increments, stirring in between until fully melted and smooth.
Pour the melted chocolate over the pressed oat mixture, spreading it into an even layer.
Refrigerate for at least 1 hour to set. Once firm, remove from the pan using the parchment paper overhang.
Cut into bars of desired size and serve.
Notes
For a sweeter taste, add powdered sugar as desired.
