Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a shallow dish, mix together the breadcrumbs, grated feta cheese, smoked paprika, garlic powder, onion powder, salt, and pepper.
Place the flour in another shallow dish and the beaten eggs in a third dish.
Take each chicken breast and first coat it in flour, shaking off the excess.
Next, dip the flour-coated chicken into the beaten eggs, allowing excess to drip off.
Finally, press the chicken into the breadcrumb and feta mixture until well coated on all sides.
Heat a large skillet over medium heat and add enough olive oil to cover the bottom. Once hot, add the coated chicken breasts. Cook until golden brown and crispy, about 4-5 minutes per side.
Once golden, transfer the chicken breasts to the prepared baking sheet and drizzle each piece generously with hot honey.
Bake in the preheated oven for about 10-15 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
Remove from the oven and let rest for a few minutes before serving.
Garnish with chopped parsley and an extra drizzle of hot honey if desired.
Notes
Serve the chicken on a platter with lemon wedges and a sprinkle of additional feta and parsley for a pop of color.
