Instructions
In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
Add minced garlic and cook for an additional minute until fragrant.
Pour in the vegetable broth and bring the mixture to a boil.
Once boiling, add the potato gnocchi and cook according to package instructions (about 2-3 minutes).
Lower the heat and stir in the heavy cream, allowing the soup to simmer for 5 minutes.
Gradually add the grated cheddar cheese, stirring continuously until the cheese is melted and the soup is creamy.
Fold in the chopped spinach, dried thyme, and paprika. Season with salt and pepper to taste. Cook for another 2-3 minutes until the spinach wilts.
Remove from heat and serve hot, garnished with fresh chives for a pop of color.
