Instructions
Preheat your oven to 375°F (190°C). Grease a 9x9-inch baking dish or a similar-sized oven-safe dish.
In a large mixing bowl, combine the cottage cheese, 1/2 cup of the mozzarella cheese, and the egg. Mix until well blended.
In a separate bowl, whisk together the flour, baking powder, oregano, garlic powder, salt, and pepper. Gradually add this dry mixture to the cottage cheese mixture, stirring until just combined.
Spread half of the pizza batter into the bottom of the prepared baking dish to form a crust.
Evenly spread the pizza sauce over the batter, followed by the mixed vegetables and olives (if using).
Drop spoonfuls of the remaining batter over the vegetables to form a topping, then gently swirl the batter with a spoon to create a marbled effect.
Top the entire bake with the remaining 1/2 cup of mozzarella cheese.
Bake in the preheated oven for 30-35 minutes, or until the cheese is melted and bubbly and the edges are golden brown.
Remove from the oven, let it cool for a few minutes before slicing. Garnish with fresh basil leaves before serving.
