2mediumapples (Granny Smith or Honeycrisp), peeled and diced
1tablespoonlemon juice
1teaspoonground cinnamon
0.5teaspoonnutmeg
0.25cupbrown sugar
1tablespoonunsalted butter
0.5cupgranola
to tastewhipped cream (for topping)
to tastecaramel sauce (for drizzling)
Instructions
In a medium bowl, toss the diced apples with lemon juice, cinnamon, nutmeg, and brown sugar. Let them sit for about 10 minutes to allow the flavors to meld.
In a skillet over medium heat, melt the butter. Add the apple mixture and cook for about 5–7 minutes, stirring occasionally until the apples are tender but not mushy. Remove from heat and let cool slightly.
In another skillet, heat each tortilla for about 30 seconds on each side until warm and pliable. This will make them easier to fold.
Take one tortilla and spoon the warm apple filling down the center. Sprinkle granola on top for added crunch. Fold the tortilla over, creating a taco shape.
Repeat with the second tortilla. Drizzle with whipped cream and caramel sauce before serving for an extra indulgent touch.
